  • Cow’s milk-free and lactose-free

Salad Niçoise with Quinoa and freshly grilled tuna

Serves 2; 30 minutes
100 g Paul's Quinoa Seeds
200 g green beans
4 tbsp olive oil
2 tbsp balsamic vinegar
1 tsp mustard
  salt and pepper
1 tbsp fresh herbs (parsley, thyme, chives)
½ lettuce
3 ripe tomatoes
1 red onion
1 handful of black olives
2 eggs
2 tuna filets

Glass bowl, grill pan 

Instructions

  • Wash and trim the green beans. Boil the green beans and the Quinoa in a pan of salted water for 10-15 minutes until done.
  • Combine the olive oil, vinegar, mustard, salt, pepper and herbs in a bowl to make vinaigrette.
  • Wash and dry the lettuce. Cut the tomatoes into pieces and slice the onion into thin rings.
  • Drain the green beans and the Quinoa and add them to the vinaigrette. Leave for a while to let the flavours develop.
  • Bring a pan of lightly salted water to the boil. Heat the grill pan until red-hot.
  • Arrange the lettuce on 2 large flat plates. Spoon over the green beans and Quinoa. Garnish with onion rings, tomato and olives. Add the remaining vinaigrette to taste.
  • Poach the eggs in the pan of boiling water and grill the tuna quickly in the grill pan.  
  • Place the tuna on the salad and sprinkle with salt and pepper. Spoon the egg on top of the tuna.

Tip:

  • Grill the tuna medium rare. If tuna is grilled for too long, it dries out, which would be a shame. Try to pay attention to the way it is presented on the plate. You will discover that people react very positively!
