Quinoa burger with spicy yogurt sauce

Serves 4; 30 minutes

Quinoa burger

150 g Paul's Quinoa Seeds
1 shallot
125 g mushrooms
1 bunch fresh coriander
1 red chili pepper
1 clove garlic
2 eggs
1 tbsp olive oil
50 g  breadcrumbs
1 tsp curry powder
1 tsp  ground cumin
2 little Gem lettuces

Yogurt sauce

100 ml  full-fat yogurt 
2 tbsp paprika 
1 loaf

Instructions

Quinoa burger

  • Boil the Quinoa according to the instructions on the packaging.
  • Peel and roughly chop the shallot and quarter the mushrooms.
  • Remove coriander leaves from stems. Chop the stems roughly and keep the leaves for the sauce.
  • Half the chili pepper lengthwise, remove seeds and roughly chop one half of the chili pepper (set the other half aside). Now crush the garlic.
  • Using the hand blender, puree the shallot, chili pepper, mushrooms, coriander stems, garlic, eggs, olive oil, breadcrumbs, curry powder and the ground cumin until smooth.
  • In a bowl, mix the pureed ingredients into the Quinoa and then form equal-sized burgers from the mixture.
  • Heat a little oil in a pan and fry the burgers until golden in about 4 minutes, turning regularly.
  • Cut the bottom off the Little Gem lettuce and separate the leaves.

Spicy yogurt sauce

  • Chop the remaining chili pepper and the coriander leaves finely.
  • Mix the coriander with the chili pepper, the yogurt and the paprika in a bowl and season to taste with a little salt and freshly ground pepper.

Tip:

  • Add feta cheese or Parmesan cheese to make a Quinoa cheese burger.
