Quinoa Bolognese with fresh vegetables
  • Cow’s milk-free and lactose-free

Quinoa Bolognese with fresh vegetables

Serves 2; 30 minutes
200 g
cloves of garlic
200 g
low-fat minced beef  
courgette, diced
sweet red pepper, diced
tin of peeled tomatoes
1 tsp
Italian herbs
1 tsp
salt and pepper
1 tbsp
olive oil
50 g
Parmesan cheese

  • Boil the Quinoa according to the instructions on the back of the packaging.
  • Chop the onion finely, crush 1 clove of garlic and fry the onion and garlic in olive oil in a frying pan. Add the mince. 
  • Put the peeled tomatoes, 1 clove of garlic, salt and pepper and Italian herbs in a large measuring jug. Puree with a hand blender until smooth. 
  • Add the courgette and sweet pepper to the mince and boil the vegetables for 5-10 minutes until tender.  
  • Add the sauce to the vegetables and mince and stir well. 
  • Spoon the Quinoa onto 2 plates, add the Bolognese sauce and top with Parmesan cheese.
