Chocolate cake with hazelnuts and Quinoa puffs

Chocolate cake with hazelnuts and Quinoa puffs

dark chocolate, finely chopped

butter, cut into small pieces

hazelnut syrup

ground hazelnuts

redcurrants
 
 
 
Hazelnut cream
300 ml 
cream
60 ml 
hazelnut syrup

 

Tip:Briefly dry-fry the Quinoa puffs in a frying pan to make it extra crispy. Cut the cake into wedges and decorate with a little icing sugar and some redcurrants.

Equipment

  • Loose-based cake tin 
  • Greaseproof paper
  • Saucepan
  • Tinfoil
  • Mixer

Instructions

  • Pre-heat the oven to 170 degrees Celsius
  • Line the base and sides of a 22-cm loose-based cake tin with greaseproof paper. 
  • Gently heat the chocolate and butter in a saucepan, stirring all the time, until they have melted.
  • Beat the eggs, sugar, syrup and hazelnuts together. Add the chocolate mixture and beat everything until smooth. 
  • Spoon the mixture into the cake tin and cover with tinfoil. Bake for 50-60 minutes.
  • Take the cake out of the oven and remove the foil. The centre of the cake will still be completely soft. 
  • Let the cake cool and then place it in the fridge to set.  
  • To make the hazelnut cream, beat the cream and syrup using a mixer until it forms soft peaks.
  • Serve the cake with the cream and the Quinoa puffs.
